Flourless Cinnamon Raisin Muffins

If you are a commuter like me, you need a quick breakfast in the morning… no time to waste. On a typical day, I wake up, jump out of bed, wash up, hit the coffee maker switch, throw on my clothes that I picked out the night before, grab my lunch from the fridge, grab two muffins and I’m out the door with my java. See.. no time to waste 😉

That’s why these muffins are perfect. Two muffins = 2 sweet and nutty handfuls of protein that will keep you full all morning. The added bonus of cinnamon will help balance your blood sugar and can cut cholesterol. Can’t hurt, right? Give these little bites a try.

You will need:

  • 2 mashed bananas
  • 2 eggs
  • 1 tbsp baking powder
  • 1 cup cinnamon raisin peanut butter (I used Peanut Butter & Co)

*If you want to use a more natural peanut butter (oil separated type), just add 2 tbsp raisins and 1 tbsp cinnamon. Also if you have a peanut allergy you can use any other type of nut butter (cashew, almond) or if you cannot have nuts at all you may use sunflower seed butter.

Mix the ingredients well and pour the mixture into a greased muffin pan. Place in the oven and let them cook for 15 minute on 350 degrees.
