Paleo Brownie Bites

I often have a hard time finding paleo or grain -free desserts that are low in calories. These little chocolate bites are so delicious, you won’t even miss the flour! They are high in protein, low in sugar, gluten free, high in potassium and antioxidants {And… each muffin is below 100 calories with only a few carbs}.

Eat them warm with a scoop of your favorite whipped topping –they are heavenly!! A great dairy-free whipped topping is coco-whip light made by So Delicious.

You will need:

  • 2 mashed bananas
  • 2 egg whites
  • 1 cup natural peanut butter (not separated)
  • 1 tsp baking powder
  • 2 tbsp almond milk
  • 2 tbsp natural cocoa powder
  • (2 tbsp chocolate chips- optional)
  • 24 cup mini muffin pan

Pre-heat the oven to 350 degrees and grease the mini muffin pan. Mix all the ingredients together with a whisk until it is dough-like. Once it is the correct consistency, take a teaspoon and scoop the batter into each mini muffin cup.  Place them in the oven for 12-15 minutes.

After you remove the bites from the oven let them sit in the pan or on a cooling rack for about a half hour.
