Turkey Taco Lettuce Wraps (Whole 30)

For a few years now I have followed a gluten free, dairy free, and paleo lifestyle. I have found that it has reduced the frequency of my migraines and digestive discomfort. More importantly, I have more energy eating this way.

This month, my husband and I have decided to start the Whole 30 program. For those of you unfamiliar with it, the Whole 30 program is all about eating real food. It requires you to eliminate grains, dairy, sugar, beans, peanuts, soy, processed food additives, alcohol and gluten. You may be thinking “well, what can you eat?” You can eat plenty of meat, fish, eggs, fruit, nuts and vegetables. I wouldn’t consider this program a diet per se because the goal is not to lost weight. The goal is to detox your body and to eliminate foods that may be causing symptoms unbeknownst to you. Once the 30 days are over, you may begin reintroducing foods.  For example, you may realize that upon reintroducing bread, that gluten or wheat is what has been causing your headaches or realize that the barley in beer is causing you to be congested. Each person is different and each person reacts to reintroduction differently. What I have found most rewarding is that it teaches you to pay attention to your body and the signals it is giving you.

As we put an end to this May Whole 30 round, I just want to say how proud I am of my husband for sticking with this for 30 days. It was certainly not easy. For someone who loves his food, especially pasta, cheese and soy, he has been a rockstar on this. He has given a new definition to will-power. He drank his coffee black, he ate bun-less hamburgers at BBQs, has gone without dessert, has drank no alcohol, added no cheese to his eggs, consumed no condiments or added sugar and has brought his lunch to work almost everyday. He has even let me feed him coconut chia pudding and golden milk lattes made with dates. This just shows you that if you set your mind to it, you can accomplish anything.

So, in the the spirit of the Whole 30 program I created this turkey taco lettuce wrap recipe. Its so good, I promise you won’t miss the flour tortillas. We certainly did not.

You will need:

  • 2 bunches romaine lettuce (used as taco shell)
  • 1 pound turkey meat
  • 2 tbsp olive oil
  • 1/3 cup sliced cherry tomatoes
  • 1/4 cup chopped carrots
  • 1/4 cup chopped sweet mini peppers
  • 1/4 cup chopped green onions (green ends only)
  • 1 tbsp lime juice
  • 1/2 tbsp lime zest
  • 1/2 tbsp chili powder
  • 1/4 cup chopped radicchio
  • 1/2 cup mild salsa
  • 1 sliced jalapeno
  • 1/4 avocado chopped
  • salt and pepper to taste

First, take the turkey meat and sauté it in olive oil. Once cooked, add the lime juice, lime zest, chili powder, salt and pepper.

Remove the turkey meat from the stove and set aside.

Next, add the peppers, carrots and tomatoes to the pan and sauté until soft.

Then add the turkey meat back to the pan and mix with the vegetables.

Next, place three leaves of romaine on each plate to start assembling the tacos. Spoon the turkey mixture onto each piece of lettuce.

Then top the turkey with some green onions and radicchio. The radicchio is a bitter, which works well because it cuts the heat of the turkey meat.

Finally add the jalapeños and avocado. I LOVE salsa so thats my finishing touch!! See.. you can have tacos without the cheese and wheat. Its low carb, paleo, dairy free, gluten free and STILL delicious!
