Homemade Walnut Butter

I am a huge nut butter fan. I love nut butters so much that my pantry is filled with them! Some of my favorites include cinnamon raisin peanut butter, coconut almond butter, and chocolate hazelnut butter. Unfortunately, the only butter that I cannot find in the store is walnut butter. As walnuts are the nuts with the highest amount of omega-3s, I thought this would be a butter I needed to include in my stock pile. For this recipe I added pumpkin seeds, which are high in zinc for immune support and hemp seeds, which have all of the essential amino acids to be a “complete protein.” In addition, coconut oil and honey are both anti-bacterial/anti-inflammatory and make this walnut butter a serious super food!

You will need:

  • 1/2 cup walnuts
  • 1/4 cup pumpkin seeds
  • 3 tbsp hemp seeds
  • 1/2 tbsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tbsp raw honey
  • 2 tbsp coconut oil

Take the walnuts, pumpkin seeds and hemp seeds and place them in a food processor or nutri-bullet (I used a nutri bullet). Then heat the coconut oil so it becomes liquid and add it to the mixture with the honey, cinnamon and nutmeg.

Blend the ingredients until smooth and serve on toast or your favorite fruit. I tried it on gluten free bread and an apple this afternoon. Both were delicious.
